Food festivals are quite the rage nowadays with regional cuisines at the forefront. Kashmiri food, although not readily available till a few years ago, is quite easy to find nowadays. In spite of all of that, the food festival at Westin manages to surprise with some unknown dishes from the fabulous range of Kashmiri Wazwan.
In fact, Chef Firdous Ahmed Dar comes from a family of ‘Wazas’ and it shows in the intricately prepared dishes full of authentic flavours and smells.
The menu changes everyday but you should definitely try the Rista here – comforting still never gets boring. Chef Dar does very well to get the same flavour you get in Srinagar.
A big surprise I got here was a superb trout I got to eat here. Trout is readily available in Kashmir, especially Pahalgam, and to get a whole trout smothered in Kashmiri spices was the highlight of my evening.
The vegetarians need not worry too, there is a wide variety of superb dishes including nadru ki yakhni, dum aloo and the famous rajma from Jammu.
Go her and do not miss the authentic flavours and the warm, comforting food of Kashmir.
