Chef Shailendra Khanna created a meticulously crafted menu for the festival in collaboration with visiting Maharaj from Marriott in Rajasthan adding his culinary expertise, experience and skill to every creation.
While the kheere ki sabzi (chunks of cucumber cooked in a spicy gravy), ker sangri (made with ker berry and sangri bean), Rajasthani kadhi and the principal dish- three types of baati with a side of churma were beautifully executed, it was the laal maas on the non-vegetarian thali that stood out because of the tender and well-marinated meat and the magical amalgamation of the right spices.
Another highlight was the Mawa topped Ghevar. In my heartwarming tête-à-tête, Chef spoke about the inspiration behind each dish on the menu and even took the time to explain the painstaking process of preparation of the Ghevar which was the star dish of the evening.
The attentive staff, an innovative menu of drinks to add that extra zing to the meal and the overall vibrancy of the space made for a memorable afternoon.
