Biryani and Kebab Food Fiesta @ Radisson Blu Kaushambi

Keeping up with the goal of serving varied cuisines to its patrons, Kama, north Indian and mughlai specialty fine dine at Radisson Blu Kaushambi has come with yet another food festival – Biryani and Kebab Food Fiesta. This time, the menu has some earthy flavors from the tandoor and aromas from the land of nawabs, nizams and bongs!

The menu is exhaustive and you will have options galore. There is a balance between veg. and non-veg. options, which is a very helpful, especially with the festivities going on. We tried a selection of kebabs and biryani, going by the chef’s choice.

The non-veg. kebab platter for us had Lucknowi Banno Kebab, Kashmiri Tabak Maaz, Kashmiri Phari and Raan-e-baluchistan. We loved the Kashmiri Tabak Maaz and Raan-e-baluchistan – both of them being the exact replica of what we had in mind – the flaky raan and the near crispy tabak maaz are delicacies you must try here. Lucknowi Banno Kebab has juicy morsels of chicken with a subtle flavor of marination. Kashmiri Phari could have been better with a thin batter of gram flour.

The veg. kebab selection had Paneer Charminar Tikka, Soya Angara Chaap and Lucknowi Kastoori KebabLucknowi Kastoori Kebab is a must try – spinach patty with a stuffing of onion and cheese – the texture and taste are unbeatable.

From the biryani collection, we tried Hyderabadi Mutton Biryani, which replicated the flavors from Hyderabad effectively; Hyderabadi Qabooli, which is flavorful, but somehow I couldn’t make peace with chana dal in biryani; Murgh Howrah Biryani could have done with less masala – the one in the eastern part of the country goes very subtle on masala and more aloos! Sindhi Biryani is the best of the lot – vegetables and dry fruits aplenty, this one turned out to be the favorite on the otherwise hardcore non-vegetarian table.

The menu is available as a la carte from September 24 to October 16, 2016 and provides an apt platform to witness a collection of biryanis from across India under a roof.
