Kiyan is the modern Indian and European restaurant of the Dusit Devarana hotel here in NCR. I happened to sample their set menu as part of the Citi Gourmet week running till the 28th of August 2016.
Set amidst the beautifully landscaped Dusit property, this restaurant is as beautiful an ambience as you are going to get in Delhi. Lush green scapes dotted with water bodies all around, calling it tranquil will be an understatement.
Coming to the Citi menu, we began with Chef Nishant Choubey’s Amuse Bouche, a strikingly beautiful deconstructed vegetarian Tuna Nicoise salad (with beetroot). Exquisite to taste, it was a complex dish full of different techniques and flavours.
The next course (appetizer) was a delicious soft cheese called Brurata, sprinkled with garlic powder, balsamic beetroot and an apricot gel. This was my first time eating a Burrata and it was delicious. The dish in totality was masterfully balanced – sweet, salty, acidic – all in equal mouthwatering balance.
The main course I opted for was the excellent sous vide chicken with paprika laced stew and braised leek puree. This was my favorite savoury course as it was hearty, full of punchy flavours – something that will suit the Indian palette to the T.
The other vegetarian option was equally delicious – homemade cappelini in an amazing bell pepper ragout with a superb flavor enhancer – a confit onion. Dining here will be a pleasure even for vegetarians.
Pre dessert was a beautifully presented orange cake with a tangy and delicious raspberry sorbet. Lively, fresh it prepared me for the piece de resistance – the dessert called flower pot.
The final flourish was this wonderful dessert very close to a tiramisu but presented anything like a tiramisu. It came in a half chocolate dome filled with an amazing coffee cream and a savoiardi biscuit topped with chocolate crumb. It looked sensational and tasted phenomenal.
Chef Nishant has left no stone unturned to wow his guests and showcase his excellent skills at this restaurant and in this menu.
It is frankly an unmissable fine dining opportunity.
