Aha, mango the king of fruit is back and everyone’s taste buds are lilting. New fresh, tangy, sweet recipes can be found everywhere. But if you want a completely unique take on the usage of mango in food, head nowhere else but to the Spice Route, Imperial to taste Chef Veena’s outstanding summer collection menu.
To taste her menu is to taste the work of a great chef that takes one ingredient, mango and ties the cuisines of Kerala, Sri Lanka, Thailand and Vietnam with it.
Our delectable lunch began with a winner straightaway, the Yum See Kler. The carrot, raw papaya and raw mango gave it the usual beautiful tangy and sweet taste central to Thai cuisine, but having ripe mango there elevated it and made it truly special.
Next were the Sri Lankan styled prawns that had raw mango in them that balanced those fiery flavours beautifully.
Among the plethora of main course dishes we had, I will recommend two, one was the PLa-E-Saan and the other the Maamblam Katrikai.
The Pla- E –Saan is basically crispy sole drenched in a sweet palm sugar sauce balanced with the flavours of raw mango. The fish itself is coated in a tempura batter and the crunch is well , epic.
The Maamblam Katrikai is a beautiful vegetarian eggplant dish that has a masterfully balanced curry sauce full of coconut and raw mango. The tanginess of the sauce is superb to say the least and the best accompaniment to this are the divine Mamblam Appams, soft centred mango appams, that make the entire menu so summery and fresh.
Our meal was finished of by a brilliant vegan coconut ice cream served with chia seeds and peanuts.
The Summer Collection Menu is on till the 15th of July and needless to say is a must try for everyone.
