Cooking a biryani well on “dum” isn’t a walk in the park, because you cannot see what’s going on inside. It requires expertise, skill and experience.
Dum Pukht’s chefs reproduce in perfect detail, the two hundred year old culinary legacy from the regal kitchens of the Nawabs of Awadh. This isn’t just a regular restaurant. It is an experience, a museum of delicacies in Awadhi cuisine, if you will.
My experience at Dum Pukht was extremely joyous. The Kebabs, Qorma, Qualiya, and Birani were cooked over a moderate flame in fixed stoneware ‘handis’, giving them a rich and special “dum” flavor. Once the “Gucchi Biryani” was taken of the “dum” the air filled with its delectable fragrance. The “Burrani raita” to go with it was finger-licking delicious.
The desserts were splendid too. Dum Pukht is the only place in the city where you will find the exquisite “Rose Petal Kheer”.
The conventional style of serving by courses is resuscitated at Dum Pukht and a silver “dastarkan” acts as a base to the lovely regal blue and white dishes. What is served at this restaurant is nothing less than a miracle. The food is without a doubt the best Awadhi you will have in Delhi NCR.
Dum Pukht has many honours, awards and accolades to boast of. It has won the award for the ”world’s best exemplary eateries” by Conde Nast, ”Best in the Country” by Asia’s 50 Best Restaurants, Best North Indian, and was additionally the champ of Asia’s first “Golden Fork Award”.
If you haven’t been served by Chef Gulam Qureshi, the you haven’t tasted brilliant, flawless cooking! The restaurant was opened by him in 1988, alongside the distinguished Master Chef Imtiaz Qureshi and words are not enough to describe the marvels of Master Chef Imtiaz’s cooking. He has even had the chance to cook for heads of state and famous people like Bill Clinton, Tony Blair, Sachin Tendulkar, Bernie Ecclestone, M F Husain & more.
